For the Salad
20oz Package Tortellini
1-1/2 Cups Grape Tomato
1 Cucumber
1/2 Red Onion
3/4 Cup Feta Cheese
For the Dressing
1/4 Cup Olive Oil
3 Tablespoons Red Wine Vinegar
1 Clove Garlic
1/2 Teaspoon Dried Oregano
Instructions
Cook tortellini according to package directions. Drain and let cool.
While tortellini is cooking and cooling; prep the rest of the salad ingredients; chop tomatoes, cucumber and red onion into bite size pieces.
Place cooled tortellini in a large bowl. Add chopped tomatoes, cucumber, red onion and feta cheese.
In a small bowl, whisk together dressing ingredients. Pour dressing over salad and stir until combined.
Serve immediately or place in refrigerator. Enjoy!
